Wine. The home of seven different varieties all with the same purpose: to fulfill the senses. The winery began as a dream of the Barco brothers to create a haven of wine and gastronomy. The rolling hills of the vineyard are diverse in soil and temperature allowing for such great variations in the wine, providing each healthy grape with a twist to classic flavors. Although the Pago del Vicario vineyard is one single continuous vineyard, its heterogeneous qualities yield superb variations of the classics.
Dining. The Pago del Vicario restaurant alters its menu with the seasons. Committed to only creating the freshest and best dishes, Chef Jose Alfonso Merlo, will make you savor his cuisine. The restaurant’s a la carte menu, along with the short and long menus, changes with the market-fresh produce and traditional seasonal plates. In the fall, the restaurant creates a classic stew daily combining local game and hearty vegetables to warm the palate.
